The nose on the 2016 Cabernet is the most surprisingly opulent of any Stony Hill Cabernet we have ever produced. Right out of the gate you are met with a mix of black cherry, herbaceousness, graphite, and rich baking spices. However, don’t let the nose fool you; this is still the structured and restrained wine you expect from Stony Hill. The initial palate, like the nose, is all concentrated blackberry and blackcurrant. This gregarious start quickly gives way to crisp red fruits and hints of clove and bergamot on the finish. The backbone of acid you were expecting shows itself at mid-palate and lightens the wine, taking you from opulence to structure and restraint. The light grip of youthful tannins gives this wine the aging potential of a true Mountain Cabernet.
