Each year we are pleased to offer a small amount of our lovely dessert wine, Semillon de Soleil. Taking our cue from the Italian approach, we pick fruit when it is ripe, but still not too high in sugar. We lay it on trays in the sun for about two weeks to let the fruit get rich and concentrated. From there, we crush and ferment the grapes, and the result is a wonderfully sweet dessert wine that still retains a good amount of its acid. It is a perfect companion for lighter fruit-oriented desserts or for aged cheeses.
The 2015 vintage is an extremely well balanced wine. Its aroma is reminiscent of pears, apple blossoms and honey. There are notes of candied citrus and a lingering, yet not cloying, finish. We are very fond of this vintage; yet another wine that has captured the essence of the unusual 2015 crop year.
