Introducing the Côte Series
Each of our Cabernet Sauvignon parcels has a distinct biosphere, with flora and fauna that are largely determined by their distinct geologies.
Côtes des Pierres, with its colluvial, volcanic material, is home to chaparral, blue oaks, and manzanitas, whereas Côte Rouge, with its Sonoma volcanics red soil (not unlike eastern Oakville) is prime habitat for redwood trees.
To preserve the distinct signatures of these sites in our wines, we culture their respective native yeasts by creating a “pied de cuve” from which we begin their fermentations.
We’re confident that these micro-cuvées will come to be seen as some of Spring Mountain District’s most distinctive, classically proportioned—and coveted—red wines. The inaugural bottling of 2022 Côte Rouge, for example, has already received 99 points in Decanter Magazine.
