Every year our Semillon dessert wine surprises us with a slightly different version of itself. The 2014 is no exception. We let the grapes hang on the vine longer than our other fruit. We then dry them in the sun to increase the sugar content before crushing and fermenting them, each step adding a unique flair to the wine. This year’s Semillon is a more delicate version of the 2013, lighter in color and texture with subtle dried floral notes and caramel on the nose and an irresistible dried apricot flavor on the palate. We think this lovely expression of Semillon will pair perfectly with Apricot Cheesecake with Caramel Sauce. Just think nectar...whether it be apricot or Semillon de Soleil!
