2008 Stony Hill Semillon de Soleil

This wine announces itself the instant the glass is set before you! The honey and caramel nose envelopes you and focuses all your senses. The color is light gold, the alcohol 13.5%, (42% sugar at crush), and the 14 % residual sugar is beautifully balanced by a relatively high acidity of .75. This is a more powerful than usual Semillon de Soleil, which we would serve with flavors of similar intensity such as Crème Brulee or a strong cheese such as Roquefort, the great sheep's milk cheese from France with a salty kick to it to balance the sweetness of the wine. Or as Mike Chelini suggests, simply pour it over Vanilla Bean ice cream and let the Semillon work its magic!
