Change is good! Stony Hill, always known for its white wines, is now producing a Red Table Wine from its six-year-old Cabernet Sauvignon vineyard, high up on Spring Mountain. The deep red soil, southwestern exposure and plentiful afternoon sun create a classic environment for the Cabernet grape. Winemaker Mike Chelini is treating the wine with a light hand, creating a medium-bodied, food-friendly Cab with deep red berries in the nose, a fresh fruitiness on the palate, and subtle mountain tannins. John Gillman, who writes the online newsletter View from the Cellar, says Mike's Cabernets remind him of those marvelous, mild-mannered Napa Valley Cabernets of the 60's and 70's. We heartily agree! You'll find it a delicious match with a thin-sliced, medium rare flank steak spiced with chili oil, garlic and sweet red peppers.
