Stony Hill Cobb Salad



1-1/2 lbs. vine ripened tomatoes, split if cherry tomatoes, but into 1" pieces if full sized
6 slices of bacon, cooked and chopped into 1" pieces
2 avocadoes halved, pit removed and cut into 1/2" pieces
2 chicken breasts, grilled or poached, cut into 1" pieces
1/2 small red onion finely chopped
3 hard boiled eggs, each cut into eight pieces
1 large heart of romaine (or two small ones), chopped into 1" pieces


1/2 cup olive oil
1/4 cup red wine vinegar
Splash of balsamic vinegar
1 tsp. Dijon mustard


Mix all of the ingredients in a large salad bowl.

Put the dressing ingredients in a jar and shake well.

Dress before serving.
